Yukihira Drop Lid - 20cm

Reimagined in enameled cast iron, the otoshibuta or drop lid is a timeless tool in Japanese cooking. It is placed directly on simmering food to gently press ingredients, where its natural weight and far-infrared heat draw out concentrated umami and aroma. Unlike the traditional wooden lids, the enameled cast iron does not absorb broth, so even a small amount of liquid is needed to infuse each dish with rich, layered flavors. Beyond simmered dishes, it delivers richer taste and new possibilities to everyday cooking.

Important: Vermicular Yukihira Drop Lid cannot be used in the oven. Use this lid on stovetops only.

Yukihira Drop Lid - 20cm

Product Highlights
  • Sear, Steam, and Savor: The Drop Lid gently narrows the cooking space, trapping steam and circulating it evenly, resulting in juicier and more flavorful dishes.
  • Simmer for Deeper Flavor: Under the Drop Lid, ingredients stay submerged and evenly cooked, which allows the natural broth to infuse with the simmered ingredients for a deeper, concentrated flavor.
  • Better Texture: The far-infrared heat of the enameled cast iron gently cooks the food from the inside, which helps delicate ingredients remain intact and beautifully textured.
  • Faster Cooking: Paired with the Yukihira Saucepan, the drop lid boosts heat efficiency for quicker cooking even on low heat.
