Takeki Furukubo

Takeki leads the pioneering team behind MODO, shaping its vision and strategic foundation. With a deep appreciation for Japanese discipline/craftsmanship and Filipino culture, he has guided the brand from concept to execution. His leadership continues to mentor the team and refine MODO as a platform for meaningful, design-forward living.

Takeki Furukubo brings over 30 years of cross-industry leadership spanning Japan and Southeast Asia, with extensive experience in retail, F&B, tourism, entertainment, and lifestyle ventures. As Vice Chairman of Fabtech Lifestyle Inc., he spearheaded the formation of MODO, guiding the pioneering team through a bold vision: to fuse Japanese craftsmanship with the warmth of Filipino hospitality.

Hana Go

Hana oversees the creative and operational flow of Modo Café in Mitsukoshi, blending her background in education with a passion for food, storytelling, and community. With a Master’s in Education, she brings a thoughtful, people-centered approach to product development, events, and collaborations that reflect MODO’s vision of connection through craft and culture.

A licensed educator with a Master’s in Education, Hana integrates her teaching and community-building experience into MODO’s food and lifestyle concepts, creating meaningful and engaging experiences for guests.

Mary Therese Cotoco

Mary drives the seamless execution of MODO’s pop-up activations and brand experiences. She oversees cross-functional teams, marketing schedules, and partner integrations, ensuring every project reflects the elegance and precision at the core of the MODO’s refined lifestyle vision.

With a background in product design, project management, and engineering innovation, Mary brings a unique blend of creativity and structure to her role at MODO. Her experience spans user-centered design, cross-functional coordination, and market-aligned development, backed by academic recognition in product innovation from Brunel University London. At MODO, she applies this foundation to lead brand activations and partner collaborations, translating ideas into immersive lifestyle experiences with clarity and craft.

Lou Pamplona

Lou blends strategy with creativity in sales, marketing, and partner brand management. She supports client acquisition, product positioning, and campaign rollouts—ensuring MODO’s offerings are not only elegant, but also commercially and culturally resonant.

With over 15 years of experience in brand strategy, marketing, and retail development, Lou brings a seasoned perspective to MODO’s business development and partner engagement efforts. Her background spans food, wellness, and lifestyle sectors—where she has successfully launched new concepts, managed multi-brand campaigns, and led cross-functional teams. At MODO, she bridges marketing execution with brand alignment, helping shape meaningful customer experiences and driving growth through storytelling and strategy.

  • Launched omni-channel campaigns and category strategies for high-profile brands like The Coffee Bean & Tea Leaf, Wingstop, Healthy Options, and Villeroy & Boch

Christian Santiago Cabral

As Head Chef of MODO and Café Dolci, Christian leads the kitchen with creativity, precision, and heart. He oversees menu planning, recipe development, and culinary execution across pop-ups, workshops, and Vermicular cooking demonstrations—designing dishes that highlight the craftsmanship of MODO’s partner brands and equipment. He ensures that every creation meets the brand’s high standards of quality, presentation, and flavor, while mentoring the kitchen team to uphold excellence in technique, service, and hospitality.

Christian began his journey with Fabtech in 2003 and has since grown through years of hands-on experience under Chef Jacqueline Go and other culinary mentors. From humble beginnings as a dining crew and assistant baker, he honed his craft in pastry, breadmaking, chocolate, and gelato, eventually rising to become Head Chef of Gruppo Dolci Inc. and then now MODO / Café Dolci Inc.

  • Professional expertise in Bread & Pastry, Chocolatier Arts, and Gelato Craftsmanship
  • Accredited Chef Demonstrator and Culinary Team Leader for MODO’s workshops and events

Jonel Casimero

Jonel leads MODO’s coffee program with expertise and artistry. He guides the cafe team, ensures consistency in every cup, and curates beverage experiences that invite guests to pause and savor the everyday. Through hospitality and precision, he turns coffee into a lifestyle moment.

Jonel is a seasoned specialty coffee professional with over a decade of experience across Saudi Arabia, Qatar, and the Philippines. He brings expertise in espresso, manual brewing, and bar operations, with a strong commitment to quality, consistency, and hospitality. At MODO, Jonel leads the coffee team with precision and purpose—curating each drink as a crafted moment and elevating everyday rituals into meaningful experiences.

  • Over 10 years of hands-on experience in specialty coffee and café leadership roles across 3 countries
  • 3rd Place – Innovation Café Latte Art Competition, Saudi Arabia (2025)

Kharen Silawan Casimero

Kharen manages the day-to-day administrative and procurement functions that keep MODO’s operations running smoothly. Her role includes maintaining and organizing key business records, handling purchasing processes from sourcing to order fulfillment, and coordinating with suppliers to ensure the timely delivery of quality materials. She also provides administrative support across departments, prepares purchase orders and quotations, and upholds efficient communication systems that strengthen both office and store operations.

Kharen began her career with Bar Dolci, a sister company of MODO, where she started as a cashier. Her strong work ethic and initiative led her to be trained in gelato production and later promoted to Store Supervisor. With years of experience in retail operations, customer service, and store management, she has since transitioned into administrative and purchasing work—bringing with her a deep understanding of operations and an unwavering commitment to efficiency and organization.

  • Established and maintained strong relationships with suppliers and vendors

Chloe Lopez Go

Chloe is MODO’s R&D Apprentice, playing an integral role in the ongoing development and refinement of the brand’s food and beverage offerings. Trained at the Center for Culinary Arts (CCA) with specialized training in both culinary arts and baking, she brings a solid foundation in classical techniques, kitchen discipline, and flavor theory.

In her current role, Chloe contributes directly to product testing, recipe development, and kitchen innovation. Her work ensures each dish or drink served at MODO meets both the brand’s elevated standards and its commitment to Japanese-inspired refinement. As she continues to grow her R&D skillset, she adds fresh perspective and creativity to the team, always guided by a clear sense of precision, integrity, and respect for quality ingredients.

Her contributions help shape MODO’s evolving culinary identity, anchoring innovation in both tradition and thoughtful experimentation.
