Ingredients
  • 2 Red Bell Peppers (Remove Stems and seeds, peel as much as possible with a peeler and slice) 
  • 1 tomato (cut into bite-sized pieces) 
  • 1/2 onion (cut into bite-sized pieces) 
  • 1 teaspoon salt
  • 200ml water 
  • 150ml milk 
  • Italian herb mix (as needed)
Directions
  1. Put the ingredients into the pot, stir gently, cover and simmer on low heat for about 10 minutes. When steam starts to come out, reduce the heat to very low and simmer for a further 10 minutes.
  2. Turn off the heat, add the amount of water, and blend with a blender. When it becomes a solid paste, add the milk and blend again. Heat on low heat for about 3 minutes until it is just about to boil. Serve in a bowl and sprinkle with Italian herb mix to finish.
